Quote of the week

“Books, for me, are a home. Books don’t make a home — they are one, in the sense that just as you do with a door, you open a book, and you go inside.  Inside there is a different kind of time and a different kind of space.” — Jeanette Winterson

Good vibration chicken salad

This salad is fast and nutritious. Great over lettuce leaves or mixed greens, in a wrap, or on a roll. Make extra for late night refrigerator raids.

Ingredients: 1 1/2 lb. chicken breast, grilled or poached and cut into small pieces, 1 green yellow and red pepper diced, 3 ripe tomatoes diced, 2 ribs of celery diced, 1 small red onion diced, 1/2 fresh pineapple, peeled, cored, and diced, 1 bunch of mint, washed with stems removed and chopped, 3/4 scallions chopped, 1/2 cup curry vinaigrette, and salt and pepper to taste.

Ingredients for curry vinaigrette: 1/4 shallots chopped, 1/2 tablespoon garlic finely chopped, 2 tablespoons curry powder, 1/2 tablespoon turmeric, 1/4 cup cider vinegar, 1 tablspoon honey, 1 cup vegetable oil, 1/2 tablespoon salt, 1 teaspoon pepper, 2 lemons juiced and 1/2 zested.

Directions: Combine all ingredients and season with salt and pepper to taste.

Word of the week

Ronyon. It was used between 1599-1606 as a noun.

Ronyon means a mangy or scabby creature. It would make an excellent, inscrutable way to refer to your neighbor’s smelly, endlessly yapping dog.
