Cooler days are more comfortable for some people, especially those who work outside. Thankfully, the grass has slowed down in growth, and it’s not been necessary to mow twice a week. A lady said that she could sit and watch the grass grow.

I did not make it to the supervisors and CVFD meetings, so have no report to give you.

Rhubarb upside down cake

I forgot to say that you use ½ cup of milk in the recipe for rhubarb and cream cheese.

This is another recipe for using rhubarb. It is from the “Ben-Adel Family Cookbook,” published in 1991, submitted by Kathy Shaffer Chapel. It is called rhubarb upside down cake.

Ingredients: 5 cups diced rhubarb, 3 cups miniature marshmallows, one 3-ounce box strawberry jello, 1 cup sugar and 1 white cake mix.

Directions: Grease bottom and sides of 9-by-13-inch pan, line bottom with wax paper. Mix cake mix according to package directions. Combine rhubarb, marshmallows, jello, and sugar.

Pour rhubarb mixture in pan; cover with cake batter. Bake for one hour at 350 degrees, or until cake tested with toothpick for completion comes out clean. Invert pan onto a rectangle plate or foil lined cookie sheet. Remove wax paper.
