Recipes

Crockpot apple butter

Ingredients: 5-6 pounds of apples – peeled, cored, and finely chopped, 4 cups of white sugar, 2 teaspoons ground cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon salt.

Directions: After you’ve peeled, cored, and chopped your apples, throw them in the slow cooker. In a medium-sized bowl, mix your sugar, cinnamon, cloves, and salt together. Then pour it right on top of your apples, and mix it together well. Cover, and cook on high for one hour. Then turn the heat down low and let it cook and simmer for another 9 to 11 hours. Stir your apple butter occasionally throughout the process.  Spoon your apple butter into sterile jars to can, or put it into freezer containers to freeze.

Broccoli cheddar soup

Ingredients: 1 tablespoon melted butter, 1/2 medium chopped onion, 1/4 cup melted butter, 1/4 cup flour, 2 cups half-and-half, 2 cups chicken stock, 1/2 pound fresh broccoli, 1 cup grated carrot, 1/4 teaspoon nutmeg, 8 ounces grated sharp cheddar cheese, and salt and pepper to taste.

Directions: Saut’ onion in butter. Set aside.  Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the half-and-half. Add the chicken stock. Simmer for 2 minutes. Add the broccoli, carrots and onions. Cook over low heat for 20-25 minutes. Add salt and pepper. Add cheese. Stir in nutmeg.
